Experience a Scandinavian Festival at Hershey Lodge

        (Hershey, PA)From November 1 through 7, Hershey Lodge and its executive chef, Bill Justus, will host Scandinavian chef Mats Peterson as part of a Scandinavian Food Festival.
        Peterson is the executive chef at the historic Grand Hotel in Lund, Sweden. He specializes in traditional Scandinavian cuisine and is a member of multiple premier culinary & gastronomic organizations, including the French Chaine de Rotisserie and Medal, Confrèrie Saint-Etienne Alsace and Medal, Swedish Chef Association, and Gastronomic Academy of Scainia. Peterson also was a President’s Award winner during his tenure at Starwood Hotels in Malmo & Copenhagen.
While at Hershey Lodge, Peterson will prepare Scandinavian menus at Hershey Lodgerestaurants, including Hershey Grill and The Forebay. Guests will have a chance to interact with him and learn more about traditional Scandinavian cuisine.
        A Scandinavian Wine Dinner will kick off the Scandinavian Festival on November 2 at 6 p.m. on the Cocoa Terrace and in Cocoa Suite 1. The dinner will begin with a chocolate and Scandinavian schnapps pairing, followed by a five-course dinner and wine pairing.
        Schnapps is a very old Swedish tradition. The schnapps pairing will include schnapps from Denmark, Finland, Norway and Sweden paired with Dagoba, Scharffenberger and Hershey’s chocolates.
Dinner will feature Scandinavian specialties, including bleak roe from Kalix with sour cream and onion; cappuccino of Jerusalem artichokes with a tartar of Norwegian salmon, quail egg and dill; seared loin of Bearing Sea cod with a red wine reduction and grain mustard-glazed fennel; sorbet of elderflower and Swedish Branvin vodka; black pepper-crusted loin of Lapponian reindeer with lingonberries, suede and parsley potato gratin; and Northern cloudberry panna cotta with creamy Hershey’s chocolate mousse.
