SANDYS, Bermuda — Chef Joseph Dolby joins 9 Beaches as the resort opens for its fourth season, after a record year.  Bringing his extensive culinary talents and training to Bermuda, Chef Joseph takes pride in the fact that everything at 9 Beaches is made from scratch. “We make our own breads, fillet our own fish & meats, and make all of our desserts in house.”

 

Chef Joseph earned his credentials at Canada’s prestigious Chateau Lake Louise, a five-star resort where he oversaw 120 cooks in seven restaurants. Offered the opportunity to specialize his efforts and enjoy the warmer clime of the Caribbean, Chef Joseph then moved to Grand Cayman to manage Breezes by the Bay, a lively local restaurant on the water, and made it a culinary hotspot.  Chef Joseph was known for making the best conch fritters in Cayman.

 

Here at 9 Beaches, Chef Joseph has developed an eclectic, ever-changing menu with internationally inspired modern cuisine. Enjoy dishes ranging from a simple crab cake to a gourmet selection of fresh meat and local fish grilled to perfection and accompanied with sauces and garnishes influenced by the Caribbean, Mediterranean and Americas.  At the main restaurant, Hi Tide, menu items feature mouth-watering options such as Blackened Fresh Rockfish with grilled shrimp and dill sauce to French Stuffed Chicken Breasts and sesame seed rice pilaf.  For those who have worked up an appetite exploring the nine beaches, the hearty Black Angus Peppercorn Steak with garlic mashed potatoes and baby vegetables will satisfy, and, of course, everyone should try his famed conch fritters, an island favorite!

 

For beach goers who want casual fare, they can enjoy festive beachfront dining on the deck at Dark ‘n Stormy’s or anywhere at the resort by calling “A la Cart,” 9 Beaches’ roaming room service. The menu includes grilled fish, chicken or burger sandwiches, Italian sausage and a full complement of freshly baked pizza options from a secret family recipe:  Margharita, Pepperoni, Prosciutto, Mushroom or Hawaiian, or “create-your-own” pizza with myriad toppings.  For a private meal, guests may enjoy dining in their room or on the veranda of their cabana, as well as on any of the resort’s nine beaches.  To place an order, guests simply call A la Cart on their 9 Beaches cell phone provided at check-in, and their order will be delivered promptly by the 9 Beaches friendly and accommodating staff. If heading out for the day or evening on an excursion, guests may order a Lunch Box To Go or a Gourmet Picnic.

 

When he is not in the kitchen, Chef Joseph enjoys mingling at Dark ‘n Stormy’s with guests and locals experiencing his culinary creations, the casual atmosphere and the amazing views of the Atlantic.  With a satisfied smile, Joseph explains, “This is why I love it here!

ABOUT 9 BEACHES

9 Beaches, is Bermuda’s only ultra-casual resort and includes 84 private cabanas stretched over 18 acres on the westernmost tip of Bermuda.  Some guests have called it, “Heaven on Earth for the down to Earth” and now “Bermuda’s Unassuming Paradise.”

 

Soft-sided cabanas stand on stilts and all have a stunning view of the Atlantic Ocean.  Some cabanas even perch over the sapphire sea and Plexiglas floor panels reveal tropical fish fluttering underfoot.  Ceiling fans and tropical breezes maintain comfortable temperatures, and for guests who need that extra bit of cool air, each cabana has air conditioners.  All 84 cabanas have ample windows and double doors that open onto ocean view verandas. These sturdy structures have aluminum frames and sailcloth-like material covering the aluminum frames, perfect for casual Bermudian living.  While some guests have called 9 Beaches’ cabanas “luxury tents” they are more like private beach houses furnished with a queen-size bed, a small bathroom with shower and a veranda.
