"Savory-Spicy-Sweet" - Four Seasons Resort

KA'UPULEHU-KONA, HAWAI'I ... November 12, 2007 ... The culinary team at
Pahu i'a restaurant at Four Seasons Resort Hualalai announces their newest
regional specialties menu - "Savory - Spicy - Sweet," a selection of
appetizers, entrees, and a dessert that highlights the abundance of
products from Hawai'i. The 'Savory-Spicy-Sweet' menu features the use of a
whole and ground spices - some grown on the island.  Following the very
popular 'Hamakua & Beyond' menu, which was extended through the end of
September, "Savory - Spicy - Sweet" will be available through the end of
February 2008.

"This task was a fun challenge for our culinary team - a menu of spices
might lead one to believe that the offerings will be spicy 'hot,'" said
Sous Chef Will Queja, "our goal was to maintain the integrity of the
natural flavors of the food, and allow the spices to complement the dish
rather than overpower it. This is in keeping with the philosophy of Pahu
i'a's ocean-inspired cuisine - to use the freshest island ingredients while
keeping the dishes simple to showcase their flavors. Alongside the savory,
spicy, and sweet flavors - this particular menu has a lot of spirit and
soul, as everyone in the kitchen contributed in its development."

Selections include:  Shichimi-Spiced Scallops, Big Island Goat Cheese
Polenta, Hamakua Mushrooms in a Savory Crepe Tart, Balsamic-Volcano White
Honey Reduction; Pan-Seared Uku-Hawaiian Gray Snapper, Sauteed Ka'u
Spinach, Hamakua Gray Mushrooms, Leek Nage, and Nakano Tomato-Coriander
Vinaigrette, Chili Oil; Skin-on Onaga (Pink Snapper), Ginger-Miso Broth,
Wailea-Hilo Cinnamon Kabocha (Pumpkin) Won Ton, Hamakua Pepeiao Mushrooms,
Baby Bok Choy, Dashi-Poached Lotus Root.

"Pahu i'a Presents"
Pahu i'a Presents is a culinary showcase of regional offerings at Four
Seasons Resort Hualalai, where our chefs share the bounty of the Island of
Hawai'i with diners through engaging epicurean experiences that delight the
senses and please the palate.

Mother Nature herself graces the ambience of the resort’s signature
restaurant, Pahu i'a. As if appearing on cue, rolling waves, tropical
breezes, the sun dancing on the horizon, and a canopy of stars create the
setting for an unforgettable dining experience. The chefs pay homage to
Hawai'i’s bounty from land and sea with their signature, ocean-inspired
Contemporary Pacific Cuisine, artfully prepared and presented.

The nightly dinner menu features fresh seafood harvests from nearby Natural
Energy Laboratory of Hawai'i Authority (NELHA), where cold deep seawater is
delivered onshore from 2,000 - 3,000 feet below surface level; and warm
surface water, from a source rated pure - provides an ideal growth medium
for marine life and thriving aquaculture farms. The culinary team works
with local farmers who provide fresh island-grown produce, and fragrant
herbs are picked from our herb garden. Pahu i'a serves breakfast and dinner
