Acclaimed Vintners and Winemakers Share Their Craft
Spring Wine Dinners 2012
The Jefferson, Washington, DC

Thomas Jefferson may have been the nation’s first foodie – bringing his own cook to Paris to master the European cuisine that he so loved.  He may also have been the first brave soul to attempt viniculture in the New World, on the grounds of Monticello.  How fitting, then, for The Jefferson, Washington, DCto be uniting these two passions in a remarkable series of Wine Dinners in the spectacular Wine Cellar. The multi-course dinners will be created by chef Chris Jakubiec, and each dish will be paired with its ideal vintage, hand picked by advanced sommelier Michael Scaffidi.
March 8:  Meat Lovers’ Paradise with Blackbird Vineyards – Wine Cellar [$185 per person]
With a winter chill still in the air, the inaugural dinner of the 2012 series is a celebration of [mostly] red meats and the big red wines that bring out their best.  Blackbird Vineyards, a quiet Napa Valley label fast gaining big critical recognition, is the ideal partner for the whole meaty meal:  the word ‘merlot’ is, in fact, French patois for ‘little blackbird,’ and the terroir-driven, Pomerol-inspired blends produced by Blackbird focus solely on varieties of Merlot, Cabernet Franc, and Cabernet Sauvignon.  The menu begins with Gougères Stuffed with Poached Veal Breast, Béchamel, and Black Truffle paired with 2011 Blackbird Vineyards Arriviste Rosé.  Progressing through five more savory courses from Short Rib Ravioli to Roast Loin of Venison, the meat doesn’t stop at dessert:  a Black Truffle Pain Perdue with Smoked Bacon Ice Cream and Marmalade of Red Fruits – served with Blackbird’s 2009 Contrarian Red Wine.
March 29The Dynamic Duo with Favia Wines – Wine Cellar [$200 per person]
Annie Favia and Andy Erickson are a husband and wife team whose partnership brings a great depth of creativity to their highly select range of California wines.  They unite art, science, and nature to produce vintages each with a distinct soul and character, expressing the true nature of its vineyards of origin.  At this dedicated 5-course dinner, their acclaimed Favia Viognier, “Suize,” Amador County 2006 is paired with Butter-poached Lobster with Carrot & Vanilla Purée and Ginger Cardamom Emulsion.  Their Plenty of Room, Pinot Noir, Marin County 2010 accompanies a Roasted Guinea HenRagout of Confit Leg, Savoy Cabbage, and Lardons with Natural Jus; and a double pairing of Favia, Grenache, Mourvedre, and Syrah, Rompecabezas, Amador 2009 makes a triumphal match for the grand finale ofBlueberry CrêpeswithBlueberry Marmalade and Vermont Maple Syrup Ice Cream.
April 3 – April 7:  Cherry Blossom Centennial Menu – Plume [$195 per person]
During the city’s celebrated annual Cherry Blossom Festival, a Japanese themed menu will be offered in place of Plume’s regular tasting menu. Finish with a tasting of a rare 1912 Madeira -- the same age as our gift of cherry trees from Japan.
April 10 – April 14:  Jefferson’s Journey – Plume [$269 per person]
Happy 269th Birthday, Tom!  In honor of the occasion, this special menu available in the dining room with a standard reservation celebrates a few of Jefferson’s favorite things:  French, Italian, and German dishes, each with wine pairings.
April 27:  Rock Stars of Burgundy and Rhone Valley – Wine Cellar [$225 per person]
Time to pull out the big guns: this is the dinner when Chef Chris gives of his best; course after course of  finest cuisine worthy of the grand classics from Vieux Telegraphe to Châteauneuf Du Pâpe to Domaine A&P de Villaine.
